Why Millet?
Proso Millet is a naturally gluten-free ancient grain packed with protein, fibre, and essential minerals. It has a mild, slightly nutty flavour that makes it a perfect substitute for rice in this comforting classic — and it cooks up just as creamy and delicious.
Ingredients
- 1 cup Bhui's Golden Organics Proso Millet, rinsed
- 6 cups whole milk (or oat milk for dairy-free)
- Roughly 11 dates (chopped)
- Pinch of salt
- Optional toppings: fresh berries, toasted nuts, a drizzle of honey
Instructions
- Rinse the millet under cold water using a fine mesh strainer and drain well.
- Combine the millet, milk, water, and salt in a medium saucepan over medium heat. Stir to combine.
- Bring to a gentle simmer, then reduce heat to low. Cook uncovered for 25–30 minutes, stirring frequently, until the millet is soft and the mixture has thickened to a creamy pudding consistency.
- Stir in chopped dates into the saucepan. Taste and adjust sweetness as needed.
- Serve warm or let cool and refrigerate for a chilled pudding. Top with fresh berries, toasted nuts, or a drizzle of honey.
Tips
- The pudding will thicken further as it cools — add a splash of milk when reheating to loosen it up.
- Use cinnamon or cardamom for a warm, aromatic twist.
- Stores well in the fridge for up to 4 days — great for meal prep!
